Can you expand on the link between sodium and fructose metabolism?

Could you explain in more detail the link between raised serum osmolality and the fructose to glucose switch via aldose reductase. It seems that drinking water (which I had previously disparaged as non-evidential) might have benefit after all. Finally an observation - perhaps we should be looking at the rate of change of glucose/fructose/sodium not just the absolute levels. This is why I like acarbose.

Whole Fruit vs Fructose

The general impression I get from multiple episodes is that ripe, sweet fruit is only to be consumed in very small quantities. While consumption of fruit juices (or most processed fruit products that concentrate their sugars) is not a great idea, whole fruit is probably one of the healthiest dietary choices anyone can make. This is because fructose appears to be nothing more than a condiment that makes the large amounts of fiber, vitamins, micronutrients, and even live organisms that make up whole, raw fruit palatable (92-96% of whole fruit is not fructose). Even if a significant portion of the fruit cannot be digested and/or metabolized by our bodies, these are key nutrients to our biomes. Biome health and diversity seems to be the key metric (not a myopic focus on fructose metabolism). My first hand experience in tropical, developing countries has shown me that people with diets that include very large quantities of raw fruit are lean and generally very healthy (no diabetes, cardiovascular issues, or even cancer). Their diets usually include a rotation of huge quantities of diverse kinds of ripe fruit as they become available at different times of the year. My question is: is there a body of literature that differentiates between consumption of concentrated fructose and consumption of whole, diverse fruit?
