Diet and Protein

Protein and diet are topics that are popular on the internet, but I don't hear many extended or thoughtful conversations about them. I have been a vegetarian since my teens, but recently started eating fish because I'm concerned about protein as I'm getting older. I started using myfitnesspal and was surprised to learn that I was eating very little protein. I'd like to hear more about a healthy diet and the best sources of protein. The only way I seem to be able to meet my protein goals as a vegetarian is to include protein powder and quite a bit of soy daily (48-63 grams of soy protein). In some circles, soy is ill advised. The "studies" and recommendations are quite confusing.

CGM and Nighttime Cortisol

I've started wearing a CGM and noticed that my glucose levels while sleeping are often higher than typical levels you've mentioned. I've had a long history of nightmares and the notion that I often have high levels of cortisol while sleeping doesn't surprise me. Any suggestions as to what I can do about it? Are there ways to reduce one's nighttime cortisol levels and keep them consistent?

Relationship between glucose and A1C

My fasting glucose and A1C have been creeping up with each passing year so my Dr suggested wearing a CGM to get a handle on what may be causing these increases. I have worn a CGM for about 6 months and also had great dialogue with a dietitian over that time. I have been limiting carbs, limiting fats, and increasing protein. My average glucose is 92, glucose variability is 9, and glucose oscillation is 21, but my fasting glucose is always near 98 or 99 and my A1C is 5.7, 5.8 or 5.9. I don't understand how my A1C and glucose are as high as they are when my food intake is the opposite of SAD. What can cause glucose and A1C to be higher than expected when food intake is healthy?
