Mechanisms Behind Why Processing Makes Foods Undesirable

Before my question, I would just like to thank you so much. I spent years trying to find a good source of info on health, and your ability to make complicated concepts understandable paired with the huge emphasis on uncertainty has made you my go to source of info on the topic. As for my question, I would find it very helpful if you could go over the details on why processed food tends to be bad for you. I would boil this down to three things 1. removing fiber and other nutrients that are helpful 2. adding in emulsifiers, sugar, etc. that are undesirable 3. The fact that processed foods seem to create an absorption problem. I am more interested in the last point here. I believe that fish oil taken in pill form doesn't seem to get absorbed as well as if you just ate fish and I would love to know why. My hunch is that the fats are unsaturated and end up reacting with free radicals, but I WOULD LOVE to know what happens in the body when you digest fats that have been left out to oxidize. What type of diet and skin care routine would be beneficial for someone with Psoriasis?

I would really grateful if you can touch the topic of Psoriasis in terms of the main causes and how to mitigate the symptoms with the help of proper nutrition/diet/exercise/etc. I have had Psoriasis (mild but enough that people notice and comment) since I was 18 (currently I am 25). I have tried a lot of different things to "cure" it but nothing seems to work. It has gotten better as I have started eating clean and doing regular exercise but I would love to have it completely disappear from my body. Random interesting fact: I tried Ayurveda (I'm from India) and there was a therapy that I went through where they gave me Ghee with some herbs and asked me to basically drink a cup of Ghee every morning. After a week or so, they gave me some powder made from herbs that gave me diaherrea and then I was asked to not eat anything but moong daal soup for 3 days. This helped clear up some of the flares. I have a feeling that the idea here was to clean the gut and allow it to heal. Someone figured out that Psoriasis has something to do with gut thousands of years back in ayurveda, interesting!

Palmitoate effects

I would love if you could comment a bit more on the role of palmitoate in metabolism. The truth is that as a result of this paper ( https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5227969/) I am not clear about its functions and if its effects are positive or negative for the metabolism.

Sugar substitutes

Do sugar substitutes such as Allulose cause an insulin spike despite not raising glucose levels nor having the direct toxicity on the liver that Fructose has?
